I would eat an open-face Asiago sandwich, whereas I would never think to do that with Romano - I suppose it's the difference in texture that makes me think that.


I've seen Italian restaurants that put a long, translucent Romano slice on top of their salads. It's an interesting idea. I tried it myself but it didn't really work. I lack the proper instrument to shave the cheese correctly.
